Fresh Parsley & Cilantro Chimichurri Sauce

Fresh Parsley & Fresh Cilantro - 1 small-medium bunch each: in total, about 4-5 loosely packed cups
3-5 cloves Fresh Garlic
1/4 cup Red Wine Vinegar
1 tsp dried Oregano
1 tsp ground Cumin
1/4-1/2 tsp fine Sea Salt
1/2 tsp Red Pepper Flakes
2/3 cup Extra Virgin Olive Oil

1. Wash and dry the fresh herbs.
2. Place all ingredients, except Olive Oil in a food processor and blend for 1-2 minutes until the herbs are finely minced. Scrape down sides of bowl with spatula and loosen the mix
3. With the motor running, slowly pour all the olive oil into the herb mix. Scrape down sides of bowl again and process for another minute.

Makes about 1 1/2 cups.

Add 1 tablespoon of sauce to each 1/4 pound ground turkey or grass fed beef burger. No ketchup required!
